CHIANTI DOC PENINSOLA

Grape variety:80% Sangiovese, 20% Canaiolo.

Production Techniques: Harvest in the second decade of September, vinification with 2 daily pumpings over at a controlled temperature of 28°C and maceration on the skins for approx. 2 weeks. After racking and subsequent malolactic fermentation, the wine is kept on the lees for 1-2 months.
Bottling 12 months after harvesting. The wine is put on the market 2 months after bottling.

Colour: Bright, brilliant ruby red.

Bouquet: Intensely winy with scents of red fruits. TASTE: Harmonious, round and very elegant. ALCOHOLIC STRENGTH: 12,5% vol.

Serving suggestions: Roasts, braised meats, white and red meats.

Serving temperature: Serve at 18-20°C, uncork half an hour before serving.

CHIANTI RISERVA

Grape variety: 100% Sangiovese.

Production Techniques: Harvest in the second decade of September, vinification with 2 daily pumpings over at a controlled temperature of 28°C and maceration on the skins for approx. 2 weeks. After racking and subsequent malolactic fermentation, the wine is kept on the lees for 1-2 months.
Bottling 24 months after harvesting. The wine is put on the market 3 months after maturing in the bottle.

Colour: Deep ruby red.

Bouquet: Intense, spicy and in excellent harmony with red fruits.

Taste: Round and very elegant, harmonious and intense.

Alcoholic content: 12,5% vol.

Serving suggestions: Roasts, grilled, braised meats, white and red meats.

Serving temperature: Serve at 18-20°C, uncork half an hour before serving.

SPUMANTE BRUT SPARKLING WHITE WINE

Main Grapes: White grapes suitable for the production of sparkling wine, in particular Trebbiano and Garganega

Production area: Grapes coming in particular from the Region of Veneto (North Italy) and Emilia-Romagna (Central Italy)

Soils: Well exposed, calcareous clayey soils, which give to the grapes a natural acidity ideal for the production of sparkling wine.

Harvest: Depending on the vintage harvest takes place between the end of August and beginning of September in order to ensure the right grape maturity and a good acid content Vinification Soft pressing of the grapes and fermentation in stainless steel tanks at controlled temperature in order to maintain the natural aromas of the grapes and obtain a basic wine rich in acids and perfumes.
The secondary fermentation (foam fermentation) takes place with the inoculation of selected yeasts in stainless steel tanks at controlled pressure and temperature (pressure-tank) following the Charmant method.

Colour: Brilliant straw yellow. Fine and persistent perlage.

Bouquet: In the nose is fragrant and harmonic, with pleasant fruity notes of apple, floral scents of withe flowers.

Taste: Full and fresh in the palate, slightly acid and fruity. In the mouth it is dry with a pleasant almond after taste.

Food pairing: A very versatile proposal: perfect as an aperitif, the dry and full taste is excellent for any meal time, excluded desserts. Particularly suited to accompany appetizers, risotto, white meat, shellfish, raw or fried fish. Suggested with fresh cheeses, soft to medium-seasoned.

PROSECCO DOC ROSÉ ZERO DOSAGE

Grapes: Merlot

Yield per hectare: 140 Quintals / Hectare

Vineyard age: 15 years

Evolution: in stainless tanks, Charmat method

Sensory Analysis: The bright and shiny color of the Rosé Zero leads to the persistent chains that the perlage draws in the chalice. Elegance and refinement are guaranteed.
The nose is enveloped by a sensation of purity that brings back to minerality, enriched by aromas of the forest.
The particular bouquet of strawberries and red berries emerge from the bouquet without forgetting the varietal wine component

Gustative analysis: Wine of important elegance, very fine. The palate recognizes the structure and immediately the true identity of a zero dosage that enhances all the aromatic components of Rosé Spumante. Intense and persistent is lively and silky, at the height of the most refined palates.

Gustative analysis: It’s very fresh on the palate. The evolutionary process of Zero Dosage leads the wine to communicate its identity: it is dry and at the same time enveloping in the mouth, thanks to the finely elaborated perlage.
